WHAT IS YUKIMURO?

Yamagata prefecture, which is located in the Tohoku region of Japan, is known for its heavy snowfall and extremely harsh winter. During this period, snow height can go up to five metres tall in Yamagata. As such, people in this snowy region have been intelligently using the unruly natural weather to create ways to enrich their lives.

One of such is YUKIMURO (雪室), a natural refrigerator that stores a large amount of snow until summer. Before the invention of electric refrigerators, the snow chamber existed as an indispensable part of people's daily lives. YUKIMURO is best for storing food that needs to be chilled and matured slowly at a low temperature, as its environment and temperature is more stable compared to an electric refrigerator. Therefore, it can retain and bring out the original flavour of the preserved food.
