Join us for an enlightening talk on Washoku, traditional dietary cultures of the Japanese, which is registered as an UNESCO Intangible Cultural Heritage of Humanity. Dr Yanagihara Naoyuki, Executive Chef of Yanagihara Cooking School of Traditional Japanese Cuisine, will delve into the philosophy and cultural aspects of Washoku, and share about the unexpected parallels between Japanese cuisine in Edo (present-day Tokyo) and Singapore cuisine. Participants will also have the opportunity to experience dashi.

This event is part of the official celebrations marking the 60th anniversary of diplomatic relations between Singapore and Japan (SJ60).

ABOUT YANAGIHARA NAOYUKI

Dr Yanagihara Naoyuki was born in Tokyo into a family specialising in the Kinsaryu culinary discipline. Kinsaryu has been passed on from generation to generation since the 1800's, during the Edo period, and is a cuisine that specialises in the cooking technique of Edo (present-day Tokyo).

He is the Executive Chef of Yanagihara Cooking School of Traditional Japanese Cuisine, and has a Doctor of Philosophy in the field of Fermentation Science and Technology from The Tokyo University of Agriculture. He has experience as a researcher at a soy sauce company and as a kitchen crew of Dutch tall ship around world.


He was chosen as a Cultural Envoy by Japan’s Agency of Cultural Affairs and as a Japanese cuisine goodwill ambassador by the Ministry of Agriculture, Forestry and Fisheries. His experience includes international food conferences and food events as a lecturer on traditional Japanese cuisine. He works together with different TV cooking programmes, continuously collaborates with printed media, and has published 16 books about Japanese cuisine. His main activities are teaching and researching about Japanese cooking at Yanagihara Cooking School of Traditional Japanese Cuisine, located in Akasaka, Tokyo.
